Warm Spring Salad
So easy, seasonal, fresh, and delicious for spring!

- 1 tablespoon olive oil
- 1/8 red onion, sliced
- 1/2 cup chopped asparagus
- 1/2 teaspoon garlic salt
- 1/2 cup peas
- 1/2 cup cooked quinoa
- 1 cup arugula
- 1 teaspoon balsamic vinegar
- 1 tablespoon parmesan cheese
In a large skillet, saute the onions and asparagus.
Sprinkle with garlic salt.
Add the peas, quinoa, and continue to saute until warm.
Turn off the heat, add the arugula and mix until slightly wilted.
Top with balsamic vinegar and parmesan cheese and enjoy warm!
