Winter Pesto

I love this pesto! You can make it with spinach, arugula or kale for when basil is out of season. It is delicious on breakfast sandwiches, pasta, chicken and more. It also stores really well and will keep in the fridge for about a week.

Ingredients

  • 1/2 head garlic
  • 1/2 cup chopped walnuts
  • 6 cups spinach
  • 1/4 cup olive oil
  • 1/4 teaspoon salt more or less to taste

Instructions

  • Add the ingredients to a food processor and blend until smooth.
  • Store leftovers in an airtight container.
