I used leftover roasted Brussels Sprouts to throw this bowl together. This recipe includes cooking the Brussels sprouts, but if you used leftovers this can be thrown together in minutes. This can be served as a side dish, or light lunch.

Ingredients
3cupsBrussels sprouts, halved
2tablespoonsolive oil
3cups quinoa, cooked1 1/2 cups uncooked
6slicesbacon, cooked and crumbled
1/3cupparmesan cheese
2tablspoonsbalsamic vinegar
2tablespoonshoney
salt and pepper to taste
Instructions
Preheat the oven to 350.
Toss the Brussels sprouts with olive oil and salt and pepper if desired.
Bake at 350 for 20 minutes flip and bake another 5 minutes
Mix quinoa, Brussels sprouts, bacon, and parmesan cheese. This can be in a medium bowl or 6 individual bowls.
Drizzle with balsamic vinegar and honey. Add salt and pepper to taste and serve warm.
